Veggie Sandwich

Are you having trouble reaching your daily vegetable goal?  I whipped up this delicious veggie sandwich in less than 5 minutes and reached half of my daily vegetable goal in one sitting.

For bread, I toasted some whole wheat sandwich thins. Have you tried these yet?  The stats are pretty impressive with 5 gm fiber per one serving!

Next, I spread 2 Tablespoons of Classic Hummus onto the bread which adds healthy fats and a bit of protein.

For the stars of the sandwich, I added fresh, chopped red & yellow bell peppers, tomatoes, and spinach topped with a sprinkle of shredded parmigiano reggiano cheese served with a sliced kiwi.

So good! I was raving about this sandwich for the rest of the day! Do you ever eat veggie sandwiches?  What’s your favorite sandwich topping?

  1. Well since I don’t eat wheat, I have not tried these. However, I have many clients who swear by them! I like that they are made with whole grain, so I recommend them to those who have not tried them. Your sandwich looks so pretty, and very tasty! Love the addition of hummus.

  2. LOVE hummus and veggies together! I usually have no trouble reaching my veggie goal, I have more problems with fruits so I’ve been making smoothies like crazy!

  8. I love hummus and veggies in a whole wheat wrap. I have seen those thins though. Looks like a tasty way to incorporate whole grains!

    I don’t have a problem getting veggies in because I lOVE them. I occasionally make all veggie sandwiches with leftover roasted zucchini and eggplant, then I add lots of goat cheese, capers and balsamic. Yum, it’s one of my favorite sandwich combinations.
