During the hot summer months, I crave light, fresh salads. This past weekend I made a quick and delicious salad featuring my favorite- seared scallops!
To begin, I made sure the scallops were very dry by using a paper towel to absorb any extra moisture. I used about 8 ounces of scallops to serve two people.
I seasoned the scallops with 1/2 teaspoon of paprika and a dash of salt & pepper. Next, I heated one tablespoon of olive oil on medium high and cooked 1 teaspoon of fresh chopped ginger and 1/2 Tablespoon of minced garlic for about a minute.
Then, I added the scallops to the pan and cooked each side of the scallops for about 2 minutes.
I served the seared scallops over a bed of spinach and fresh chopped red bell peppers topped with shredded parmigiano reggiano cheese and red wine vinegar as the dressing.
The hint of fresh ginger was a great addition to this salad!

It really is impossible to eat anything heavy in the summertime. Salads are my go to food, I love adding fresh fruit and dried snap peas for some crunch. Have a great week! Stay hydrated in this heat!

My favorite these days is a Greek salad!! I love olives, red onions & of course feta cheese with a Greek dressing.

I love scallops and I love salad! I don’t know why I’ve never combined them. I love salads year ’round, but especially in the summer. My salads almost always include goat cheese and avocado.
Yes, I love salads! I love adding salmon, salmon salad, beans, lentils, egg whites… I have never added scallops, but I’ll have to change that!
