Summer Barbeque

Happy Fourth of July!!!  I hope everyone is enjoying the holiday.  Cory and I attended an Independence Day BBQ with family.  During the warmer months, almost every weekend we go to a party that involves grilling food outdoors and today was no exception.  Cory and I always volunteer to bring the veggies.  In fact, marrying a dietitian has made Cory quite passionate about his vegetables.  Not only did he make a trip to the grocery to pick up the veggies, he also helped with the prep work.

Today, we brought corn, asparagus, and vegetables skewers with zucchini, squash, mushrooms, and bell peppers.  Everything turned out delicious!

For perfectly grilled corn, soak the corn (with husk) in water for about 30 minutes.

To grill, simply place directly on the grill (lower heat) still in the husk and cook for ~25 minutes, turning the corn every 5 minutes or so.  Expect the husk to blacken a bit.

After cleaning and trimming the asparagus, we sprayed with olive oil and seasoned with garlic powder and a little bit of salt & pepper.

To grill, place asparagus directly on grill and cook for ~8-10 minutes, occasionally turning.

For the veggie skewers, we cleaned and chopped the zucchini, squash, mushrooms, and bell peppers.  Once on the skewers, we sprayed with olive oil and seasoned with paprika, chili powder, garlic powder, salt, & pepper.

To cook, place directly on the grill and cook ~10 minutes (depending on the heat of the grill).

I think the asparagus was the biggest hit because we didn’t have any leftover!

    Happy Fourth! My favorite thing to grill is sliced butternut squash, but really, we love all veggies grilled.

    Looks wonderful!! I love asparagus on the grill!

    We had fresh mozzarella, home-grown tomatoes, and home-grown basil, along with some wood plank grilled salmon! YUM!

    Looks great!!! We barbqued also. We had ribs and chicken breast. Chicken breast are my favorite. We marinated them in Italian dressing and then put them on the grill. It helps keep them moist and not dry. I also made an awesome Greek salad with olives and feta cheese. It was a hit!! Hope everyone had a great 4th!! :)

    Believe it or not, Nick has grown to really enjoy veggies too. I guess living with an RD/marrying an RD requires that you must love veggies :) Nick begs for broccoli just about every night, it’s unreal. I only hope our kids are like that!

    Our fourth was a lot of fun too. Lot’s of good food (not much healthy food though….) and lots of great friends and family memories.

  9. Your veggies look great! And it’s smart to volunteer to bring the veggies; that way you know they’ll be good! :) We didn’t bbq on the 4th, but we spent a nice, quiet day with my brother-in-law in San Diego, which was very nice.
