Broiled Scallops

Happy Monday!  Hope everyone had a great weekend.  My weekends (and most of my spare time) continue to be filled with wedding parties and wedding planning which is the reason for my once a week postings as of late.  With less than one month until we leave for St. Lucia, I feel like my “To Do” list grows longer and longer every time I look at it.  Married Ladies- Was the month before your wedding crazy busy?   

With most of my energy going towards wedding planning, I have been cooking “easy”, “go to” dinners that are in frequent rotation at our house- such as Shrimp Pasta Homemade Pizza,  & Tacos.  Kind of boring for blogging purposes so this past weekend I decided it was time for a “new” recipe.

If you like scallops, this recipe is a must try!!!  I found the recipe at allrecipes.com.  Of course, I made a couple substitutions.

 

Broiled Scallops

Ingredients

1/2 pound bay scallops

1 tablespoon garlic salt  garlic powder

2 tablespoons butter, Smart Balance Light, melted

2 tablespoons lemon juice

I also added 1 tablespoon of paprika

Directions

  1. Turn broiler on.
  2. Rinse scallop and place in a shallow baking pan. Sprinkle with garlic salt garlic powder and paprika, melted butter Smart Balance Light and lemon juice.
  3. Broil 6 to 8 minutes or until scallops start to turn golden. Yields 3 servings.

I served the scallops over whole wheat couscous with roasted asparagus.

Have you tried whole wheat couscous yet?  Check out the fiber & protein per serving!  Not to mention, it’s delicious :)

This dish was absolutely fabulous!!! Cory loved it.  Each serving of broiled scallops over whole wheat couscous was 387 calories, 35 gm protein, & 5 gm fat.  Switching from regular butter to Smart Balance Light saved almost 50% of calories from fat.

    I haven’t tried couscous yet. I know I need to cause you always rave over it. Do you you use it like rice??? This recipe looks good, I never cooked with scallops, I know my husband would like it!!

  7. That recipe looks great..and simple! Love it! I have never had whole wheat cous cous. It looks great and I love the stats.
    Hope you get everything done before the wedding..then you can just relax and have fun!

  9. I bet the last month before a wedding is stressful. I can only imagine!! But you are going to have a blast. And then St. Lucia?? Boy am I jealous.
    I love scallops, and this recipe is right up my alley. I rarely buy couscous, but I’d love to try the whole wheat kind (or at least just taste it, since I don’t eat wheat….). Because of my “no wheat” diet I usually stick to quinoa, which is really similar.
    Love Smart Balance light. That’s the only margarine I ever buy!
