Pasta for One

Less than 50 days until Cory & I leave for St. Lucia to get married!  I went to my final bridal gown fitting this past Friday. Sorry, no pics… Cory (who reads the blog on occasion) cannot see the dress until I’m walking down the aisle!  Most of the major wedding planning is done but there are a few little things left for us to do.  For example, today I called not one, not two, but four different local government offices to figure out how to register our “out of the country” marriage.  Well turns out, filing the marriage locally is completely optional and is basically just a safety precaution to have a copy on file in case the original document is misplaced/lost.       

Over the weekend, Cory and I ran a few errands and ended up at World Market.  We received a gift certificate as a Christmas gift and decided to buy new plates!

You know you are a food blogger when you get unusually excited about new plates!  Of course, I could not wait to take a picture of a meal using a new plate.

I have a couple nights each week that Cory has night classes and I fend for myself for dinner.  Lately, I’ve been eating either leftovers or breakfast foods at dinner time (aka Brinner).  Last night, Cory was in class and I was craving pasta- so I made pasta for one! 

First, I boiled just enough whole wheat pasta for one serving.

Next, I sautéed a tomato, handful of spinach, and red peppers in a drizzle of olive oil. I seasoned with garlic powder, onion powder, red pepper flakes, salt & pepper to taste and mixed the veggies with the whole wheat pasta.  Finally, I topped my dinner with parmesan cheese and served with a glass of vino!

  2. ahh st lucia is amazing! I have been before and i think it is one of the most beautiful locations to have a wedding!! congrats!

    It’s only about once every couple of weeks that I cook for one. I do fish a lot, or make a panini out of leftover roasted veggies. Your pasta dish looks great!

  5. I am so excited for you! I can’t wait to hear about the wedding and see the pics. I’m sure you will be absolutely beautiful.

    Yum dinner, and even yummier with the red wine. I recently found this inexpensive bottle at Trader Joe’s that I LOVE. Its Arcachon Cellars (pinot noir out of Oregon). I don’t know if TJ’s carries the same vino in your area, but if so try it. :)

  6. I am single so I am always cooking for one! I always make large portions and eat the leftovers throughout the week. Probably another reason why I don’t blog everyday..it would be boring!

  7. How exciting!! less than 50 days?! Wow, I’m so happy and excited for both you and Cory. Yes, I would also be excited about those amazing plates!! What fantastic colors and the pattern is great.
    The meal for one looks perfect. I am not a huge pasta eater, but your topping is perfect and I love that they are whole what pasta noodles!! I bet you could fool someone with those. They look like regular ol’ pasta!
