Roasted Okra

Are you bored with your veggies?  I realized a handful of vegetables (sautéed spinach, roasted asparagus, & steamed sugar snap peas) are in frequent rotation in my house with little variety.  So when I spotted fresh okra at the grocery, I decided to spice things up in my kitchen. Now, I’ve had my fair share of okra over the years. In Louisiana, people traditionally prepare okra by sautéing with tomatoes, breading and frying okra, and of course, cooking okra in a gumbo.  I opted to try something “new” with my okra- roasting it!

After washing and drying the okra, I lightly drizzled with olive oil and seasoned with a little salt, pepper, and chili powder.  Then I baked in the oven for about 12 minutes at 450 degrees (stirring once half way through).  Once finished, the okra will be browned on all sides.

Quick, easy, and no cutting involved.  The chili powder added a little kick.  They made the perfect side dish!  Plus, okra is low in calories, a good source of fiber, and chock-full of vitamins and minerals with 1 cup of raw okra providing 31 calories and 3.2 gm fiber.

  1. You are getting married in St Lucia?! Wow, that’s so exciting. Nick and I are thinking of doing a destination wedding in Charleston S.C. I can’t wait to hear about your own experience…will you do a post about preparing for a wedding ? I need tips! (no, I’m not engaged yet, but we plan on it somewhat soon!). The invitations looks so beautiful.

    I have never cooked with okra but it was on Good Eats once and Nick and I both agreed we should try it sometime. We have had it before, and we know we like it, but it’s sort of scary to cook with! All that slimy stuff, you know?? I like your simple way of preparing them, they look really tasty.

    I’ve tried roasting okra once, and I must not have done it right, because it was tough and chewy.

    But, on to more exciting things…St Lucia!!?? You will love the caribean! What an exciting and romantic place to get married!

    Great looking invitations!!!! They look so beauitful! I love okra it is my favorite, I never thought to roast them, but I will try. Are they slimie when you roast them? I usually cook them down in the stove with tomatoes.

    Kristen- Honestly, okra is pretty unique. If I had to compare it to a vegetable, I would say that it is a long distance cousin to a green bean!?

    I reeeeally like okra, but you’re right its not a popular veggie. I throw it in stews mostly, but roasting sounds yummy.

    I am a displaced Southerner who not only loves okra but wrote about this beloved vegetable on the exact same day you did. That said, I have never tried roasting and will do so the next time I see okra at the market (which may be a while, of course).
