Quick and Easy
New Orleans has a serious case of Super Bowl Fever! Many people and children are getting off from work and school the Monday after the game. There are Saints flags, posters, banners, etc., all over the city! The hospital cafeteria has been playing Saints music all week… including “Get Crunk”! I even saw the phrase “Who Dat!” following MD orders in two separate patient’s medical records- seriously! While I’m so pumped up for the game, I have been living in wedding-planning land the past few weeks! Ordering paper, designing invitations, printing mailing labels, and stuffing envelopes has been consuming most of my free time. I successfully mailed out my best friend Claudia’s couple shower invites yesterday… we (her bridesmaids) are throwing them a party with a guest list of almost 200 people!!! Also, my sister and I have been working on Cory and I’s formal wedding invites. I hope to get them mailed out by next week! Needless to say, quick and easy dinners have been the theme in my kitchen.
For example, the other night I threw together an egg sandwich on a whole wheat english muffin spread with goat cheese and served with sautéed spinach. Goat cheese pretty much goes with anything in my book!
I LOVE these whole wheat english muffins! For some reason, I haven’t bought them in over a year?!
Unsure if your bread product is a whole grain? Trust me, food packaging will try to trick you! Look for ‘100% Whole Wheat’ on the package. Also, look for whole wheat flour as the first listed ingredient.

Cory’s birthday is tomorrow! I can’t wait to give him his presents
The plan is to have a low-key night at home Friday with his favorite cake… Funfetti! Then, we have dinner reservations at our favorite restaurant Saturday night!

Quick and easy this week was turkey bacon BLT’s with avocado and hummus + homemade baked sweet potato chips on the side! Mmm!

Gotta love quick and easy. If I’m feeling pretty lazy, I will make some annie’s mac and cheese and throw in whatever veggie I have on hand, broccoli, spinach, you name it.

Yes quick and easy has been right up my alley, I am really busy making invites and taking care of my little ones!!! Breakfast at dinner is the best way to go. We did that a lot this week, my kids love it anyway so everyone is happy!!!!

Happy birthday to Cory! Nick LOVES English muffins, and requests them at the store all the time. We buy that kind usually, because they are 100% whole wheat, like you said. I like to do easy tuna melts on them, and also pb&j
This week I make EASY polenta and EASY chili!! They both took less than 15 minutes and tasted great! I also sauteed some spinach and added it to my polenta, which was a much needed addition so it was a bit healthier.

Go Saints! It would be so fun to have my home team be in the Super Bowl, but the Kansas City Chiefs are pretty low on the radar. And it’s so true about bread companies trying to trick us. It is necessary to read the back of anything before buying it!

Good info on the english muffins. Tricky is right. I’ve bought pizza dough that says whole wheat on the front, but the ingredients list says enriched wheat flour. Well isn’t most flour wheat flour?! Sneaky, sneaky. Have a good week!
