Last night I cooked spaghetti squash for the first time. I’ve seen many different ways to cook the squash around the blogosphere; some cut it in half and microwave or bake, while others microwave or bake it whole. I knew it would take some major muscle to cut the squash in half prior to cooking so I went with the cooking whole option. Of course, it does take a bit longer to cook whole.
I cooked it whole at 350 degrees for an hour. Once cooked, I cut it in half and removed the pulp and seeds (very carefully because it was quite hot!). Next, I used a fork to scrap out the fleshy inside which fell apart like spaghetti-like strands. I only used half of the squash for dinner and saved the rest for leftovers.
I topped it with roasted red pepper and garlic jarred spaghetti sauce, mozzarella, and parmesan.
Cory was a bit hesitant to try this at first but after some coaxing he went for it. Because spaghetti squash is a bit crunchier than pasta, it took Cory a little while to get used to the texture. Overall, he liked it (cleaned his plate!) and gave it 8 out of 10 on the taste scale. I give it 8.5 out of 10!

I have a full day ahead of me; my sister and I are working on wedding invitations all day. Then, this afternoon I’m driving to Biloxi, MS with a bunch of girlfriends for a weekend bachelorette party for my friend Christi! I’m not the only one of my friends getting married this year… I actually have five good friends getting married in 2010 as well! It’s going to be a busy year with lots of wedding festivities

LOL.. I love hearing about how the boyfriends/husbands react to healthy food! “Cory was a bit hesitant” made me laugh. I don’t think they know what they’re getting into when they marry a RD. I applaud you and all your healthy cooking. And I’ve actually NEVER made spaghetti squash. I really should try it.
I hope your bachelorette weekend was a blast! It sounds like you’re going to have a crazy year with your wedding AND all the other weddings. Good luck with that. After just one weekend of being wedding planner bridesmaid I tried to convince my girlfriend to elope! Weddings are a lot of work!! But you already knew that.

Ah yes! My favorite food on the face of the planet! I eat spaghetti squash EVERY DAY! WOO WOO, I cannot get enough of it, seriously, I am ridiculous! ha ha.
