Super Bowl Bound

My Saints are headed to the Super Bowl!!!  What a game?!  We barbequed and watched the game at our friends Todd and Lori’s house.  As soon as we won in overtime, fireworks started going off all around the city.  People were literally dancing in the streets on our way home.  A few of my friends tried to talk us into meeting them to celebrate on Bourbon Street but 1) I was exhausted after such a nerve racking game and 2) I have work today!  I can’t wait to witness the excitement all over the city over the next two weeks.

Okay, let me back track a little bit to talk more about our fabulous barbeque.  Because I was working yesterday morning, Cory volunteered to stop at Whole Foods for barbeque supplies/food.  He asked if I had any special requests… and I requested lots of veggies!  He came back with husked corn, asparagus, squash, and zucchini plus some chicken breast for me and ribs for him.

Lori and I prepped the veggies for the grill while Cory and Todd prepped the meat.  The secret for delicious grilled corn is to soak the husked corn for about 20-30 minutes in water.  Then, grill the corn still in the husk directly on the grill rack.  We simple drizzled olive oil and added salt and pepper to the other veggies and wrapped in foil.  For the chicken, Cory used a little olive oil spray then seasoned with chili powder, garlic powder, onion powder, salt and pepper.  I have no idea what he did for the ribs but I think brown sugar was involved.

The corn was AMAZING… I definitely went back for seconds on the corn!  Everything was delicious.  Thanks to Todd for handling the grilling :)

What’s your favorite food to grill?

Hope everyone had a great weekend!  I’m off to discuss how amazing the game was with all my coworkers… “How bout them Saints?!”

Thanks for reading!

  8. Out of curiosity, did Todd and Lori meet in college, and did he play football in college?? haha, I just ask because I went to college with a girl named Lori, and a guy named Todd, who dated and I hear they are now married!

Anyway, the food looks fantastic. I love the cooking methods, and ingredients. Not to mention the fact that your hubby came back with some perfect food!
