Taco Night with a Twist

Thanks for all the well wishes for Cory and I’s upcoming wedding!  Y’all are too sweet :)

Speaking of Cory… Cory LOVES our Taco Thursdays.  He actually reminds me about it each week to make sure that I plan on cooking the tacos just in case I forgot.  Last night, instead of using extra lean ground meat I used shrimp to spice things up.   

Ingredients

1 pound of Shrimp

1 Tablespoon Olive Oil

1/2 cup Onion

1 Red Bell Pepper

1 teaspoon Chili Powder

1 teaspoon Paprika

1/2 Avocado, chopped

Salt and Pepper to taste

Salsa and Lime Juice for toppings

Whole Wheat Tortillas

 

Directions

1) Mix chili powder and paprika and season shrimp.

2) Heat oil in large pan and sauté onion and bell pepper until softened.  Add seasoned shrimp to pan and sauté 5 to 6 minutes.

3) Serve over whole wheat tortillas and topped with avocado, lime juice, and salsa.

This was easy, fast, and delicious.  Plus, it was a great balanced meal with protein (shrimp), healthy fats (olive oil, avocado), veggies (red bell pepper, salsa) and whole grains (tortillas).  It received 8 out of 10 on Cory’s goodness scale!

    I love mexican food, it is one of my favorites ! I will sometimes make fajitas or quesadillas.
    That dinner looks simple, but yet very healthy.

    We do taco salads, burritos and occasional enchiladas at home. I love shrimp and am definately making your recipe. I don’t know why it’s never occured to me to use shrimp. Good call!

    Hey love! The pizza was delish!! Oh the juicer, not any creative creations here, lol!! I did my first juice today, carrot, apple, and ginger, it was good and better than going and paying 6 bux for a juice like I usually do!! Have a great Sunday! xo

    Just made this tonight, Kasey, and it was soooo good! Very simple. My red bell pepper mixture got soft and made it wet, so we didn’t really add salsa. Even Isaac ate it (we added cheese to his). Thanks for the recipe!
