Weekend of Hibernation

Thanks to everyone for sharing your stress management tips!  I definitely took some of your advice and had a relaxing (yet productive) weekend.  New Orleans was soooo cold this past weekend in the 20s and 30s.  It was the first time I took out my slippers all winter…

Although I literally did not leave the condo, I was pretty productive.  After watching an episode of Neat on Fit TV, I had an intense desire to organize our closet.  Since our closet was not “unorganized” to begin with, I just reorganized and straightened things up a bit.  Space is at a premium in our one bedroom condo.  We take advantage of vertical storage in our shared closet.

After my closet cleaning frenzy, I cleaned the entire condo.  Cleaning to the degree of sweeping under the couches.  Cory was working and missed all the cleaning fun.  Mid day, I took a break from cleaning and organizing for a quick lunch.  This lunch took less than 5 minutes to prepare and cook.

Almond Butter and Jelly on toasted Whole Wheat Bread, Cooked Spinach, and a Clementine!

I prefer cooked spinach over raw spinach.  I heated a bit of olive oil in a small nonstick pan, added two huge handfuls of spinach, and cooked about 2 minutes.

  1. I love when everything is clean and organized on Monday morning! :) Unfortunately, I wasn’t as productive in the cleaning department as you over the weekend…

    Recently my quick lunches have consisted of wraps on a sprouted tortilla with hummus, turkey, cheese, & lots of arugula.

  2. First of all, I had NO idea Fit TV had a series on organization! I think that’s funny, yet kind of cool. I like to consider myself an organization guru, but I’m only organized in my own “Gina way”. Some people may not call me organized, but to me I’m definitely Type A organized! I would like to check out this show though, and maybe get a few tips form the experts!

    Like you, I would much rather have cooked spinach than raw. I don’t know what it is about raw spinach but I just don’t really like it. I actually bought some this weekend and cooked it all down right when I got home :)

    Favorite go-to lunch: Soup and salad, or salad with cottage cheese and oranges on top!

  4. I live in a 1-bedroom Manhattan apartment with my hubby, and keeping our closets organized is always a challenge! I might take some tips for how you’ve handled it. I like a good turkey sandwich or wrap as a quick lunch.

  5. Cooked spinach yum yum! Have you ever baked spinach? It is equally as yummy, somewhat like kale. Quick go-to lunch is a whole wheat pita with hummus, sunflower seeds, sprouts and spinach.

    I have never tried baking spinach. In fact, I’ve never tried baked kale yet either!

    My quick way for lunch is PB & J with all natural peanut butter and jelly on wheat!!!
