Good Morning Buenos dias! Well, it’s still pretty cold in New Orleans with no sign of warmth in our near future. In fact, there has been snow rumors for Saturday!
Last night, Cory and I threw together a quick, healthy dinner brinner- Breakfast Burritos. (breakfast food @ dinner time = Brinner)
This meal seriously took less than ten minute to put together. I came with the idea and Cory did the cooking… I have the best fiancé!
-Black Beans
-Scrambled Eggs
-Salsa
-Low Fat Shredded Cheese
-Guacamole
-Whole Wheat Tortilla
-Fresh Fruit
Didn’t Cory do a great job with the food presentation?! So colorful! This meal provides a balance of protein (eggs, beans, cheese), fiber (whole wheat tortilla, beans, fruit), and healthy fat (guacamole). I had a huge salad with vegetable soup at lunch which covered my veggie intake for the day.
The verdict: I thought this meal was delicious. Cory said and I quote, “I feel like I’m cheating on my tacos”. We usually do a Taco Night once a week using extra lean ground meat and my Low Sodium Taco Seasoning. Cory LOVES tacos.

Yes we do brinner quite often, because it is quick and easy, because we don’t have time to eat eggs etc in the morning. My son TJ’s favorite is eggs!!!
We use that low sodium taco mix too, it’s fantastic!
This meal reminds me of my childhood, because my mom used to make these for us a lot for dinner. Why? Well it’s healthy, simple, and kids of all ages (and people of all ages) love it! Eggs are just a great food in general, and they work well at all times of the day, in my opinion.
