Banana Pancakes

Merry Christmas Eve y’all!  Yesterday, we had a mini Christmas party at work.  I got some awesome gifts… a bottle of Malbec wine and a couple of bridal books!  I have the best coworkers  :)

This morning I cooked Cory’s favorite breakfast, banana pancakes.  I used 100% whole wheat pancake mix with added bananas of course!

I prepared the mix according to the package (add milk, oil, and egg).  Then, I sliced two bananas.

I found the key to not burning the pancakes or the bananas is to add the bananas while the pancake is cooking in the pan.

1. Spray cooking spray into a pan and heat on medium (I used 4.5 out of 1-9).

2. Pour batter into heated pan. Add banana slices on top of cooking pancake batter.

 3. Next, I pressed down on each banana slice and spread batter over so that the banana slices were no longer visible.

4. Then flip and finish cooking the other side.

To serve, I spread a little bit of Smart Balance Light and topped with fresh banana slices and warmed maple syrup.

 So delicious!!! Cory gave this a 10 out of 10  :)

 

I’m keeping it short and sweet because I’ve got some last minute errands to run before the party tonight!
