Canned Soup

Happy Monday!  Thanks for everyone’s comments on the last post. I loved reading about the foods y’all plan on celebrating!

This weekend I finished wrapping all my Christmas presents including Cory’s present…

Of course, I’m going to wait till after Christmas to share what I got him so he can be surprised!

In the middle of my wrapping presents/cleaning the condo frenzy, I decided to try a new product for lunch.  Cory was out finishing his last minute Christmas shopping so I was on my own for lunch.  Amy’s Low Fat, Light in Sodium Minestrone soup had been sitting in my cabinet for weeks.

The nutritionals were pretty good for canned soup.  If you’re not careful, you can exceed your daily allowance (2,300 mg) for sodium with most cans of soup!  However, this soup has only 290 mg Sodium per serving.  I had the entire can which equals 580 mg Sodium.

While nothing beats homemade, this soup was pretty good.  I did add a little bit of pepper.  I loved the pasta and actually wished there was a bit more of it.  I also loved the variety of vegetables… tomatoes, onions, carrots, celery, green beans, peas, leeks, plus potatoes and beans!  On the side, I had a serving of Kashi Toasted Asiago Crackers.

Overall, I give this soup a 7 out of 10.  Now for the Kashi Oatmeal Dark Chocolate cookie I had for dessert… a 9 out of 10!  This cookie heated in the microwave for 15 seconds = pure bliss!

Speaking of cookies, I’m participating in a cookie swap this Wednesday with my coworkers!  I’m researching recipes for peanut butter cookies… Cory is sooooo excited about the cookie swap.  I decided on peanut butter cookies because that is his favorite!

    I love that you pointed out the sodium in this soup. It’s crazy how fast sodium can add up in our food. 590 mg is a lot of sodium, but compared to most soups it’s pretty low! I like the Trader Joe’s or Pacific pureed soups, in the cardboard containers. I only get the low sodium varieties because sodium makes me bloat so bad. I love the tomato, red pepper, and butternut squash varieties!

    Favorite type of cookie: Tagalong Girl Scout cookies!
