Stocking My Mini Mart

It is T minus 10 days until Christmas Day!  If you are like me, you plan on squeezing in some shopping after work.  The hustle and bustle of the holidays can cause havoc to healthy eating.  Normal schedules are disrupted by an abundance of holiday parties and an increased number of errands to run.  Without planning, good intentions of healthy eating are lost.  Think about it…

You get off of work at 5pm and decide to run to the store to buy that last minute gift.  Traffic is inevitable.  By the time you arrive at the store, find the gift, wait in a “longer than usual” line, and check out, it is already 7:30pm!  You haven’t eaten since 12:30pm.  Seven hours since your last meal, you are ravenous.  Your healthy intentions go out the window and you pull into the nearest drive-in.

To avoid the above example, I make sure to always have emergency snacks on hand.  Nuts, apples, and larabars can usually be found in my bottomless purse.  At work, I have such a variety of daily snacks at my desk that my coworkers joke that I’m running a Mini Mart.

What’s stocked in my Mini Mart today?

Snack 1 = Sliced Red Bell Pepper with 2 Tablespoons Hummus (70 Calories, 3 gm Protein, 4 gm Fiber)

Snack 2 = Apple + Hard Boiled Egg (165 Calories, 7 gm Protein, 4.4 gm Fiber)

Snack 3 = Roasted Pumpkin Seeds (190 Calories, 8.5 gm Protein, 1.4 gm Fiber)

Anyone who knows me, knows how much I love eggs!  For some reason, it has been a while since I boiled a few eggs to have on hand as a quick snack/protein boost.  Thanks to Carissa for reminding of the boiled egg snack option :)

I try to plan snacks that have a good balance of protein, fiber, and healthy fats.  Definitely beats what most vending machines have to offer.

  1. Love your snacks! I used to love hard boiled eggs as a snack but can’t eat them anymore… :(

    My go-to snacks these days are a banana with raw, crunchy almond butter or veggies with salsa.

    yogurt almonds and granola bars! my office also gets fresh fruit delivered every day, so today I have a granny smith apple, banana and pear available as options.

  5. I am known for my planning, by most people who know me!! Seriously, I plan ahead for everything, especially snacks. I bring a snack with me wherever I go, no matter what. Even if I’ll only be gone for 30 minutes, I bring a snack in case I end being gone longer. I HATE getting hungry and having no option but to stop and buy/pay for crappy food. And, as those who know me well know, I get super cranky when I am hungry, SUPER cranky :)

    I love your healthy snack options. I usually pack SoyJoys, apples, banana, carrots and peanut butter, and other things….
    I love the egg idea, but the egg whites give me bad gas (sorry, gross I know) so I have a problem eating eggs often, too bad because I love them!

    I can relate! Whenever I’m in a bad mood my mom/sister asks me, “Are you hungry?”

    love all those healthy snacks! i usually freeze fage for a snack, or apples and almonds, LOVE that hard boiled egg!

    I’m a huge snack person! Your term ‘mini mart’ is perfect. I always have some kind of snack in my purse for emergencies :) Usually I’ll bring a bar, nuts or fruit.     I always have some kind of bars in my purse, but those are some good ideas. I have tried my yogurt frozen, very good!
