Chicken Stir-fry over Couscous

Hope everyone had a great weekend!  Despite the dreadful weather in New Orleans Friday night (cold + rain), Cory and I attended our friends’ wedding.

It was a night filled with friends, fun, and lots of dancing… Congrats Dustin and Shannon :)

My Saturday was spent holiday shopping with my mother.  I still have quite a bit of shopping ahead of me! 

Sunday was a day of rest!  Stayed in my PJs most of the day, hibernating and enjoying some football.  The Saints made an amazing comeback!!!  After the game, I squeezed in a 30 minute weight training session with my “home gym“.

On to the food… 

After my version of ginger beef stir-fry turned out so well, I decided to try something similar with chicken.  I was running a little short on time when I was preparing this dish so I simplified the steps and substituted couscous for rice… couscous takes only minutes to prepare!

Ingredients

  • 2 Tablespoons Low Sodium Soy Sauce
  • 2 Tablespoons Rice Vinegar
  • 1 teaspoon Cornstarch
  • 1 Tablespoon Sesame Oil
  • 2 teaspoons Olive Oil
  • 1/4 cup Water
  • 1 Tablespoon Garlic, minced 
  • 1/2 Tablespoon Ginger, minced
  • 1/2 cup Onion, diced 
  • 1 large Red Bell Pepper, chopped
  • 1 large Yellow Bell Pepper, chopped 
  • Chicken Breast Tenderloins, chopped

 

Directions

First combine soy sauce, rice vinegar, water, and cornstarch.  Whisk until mixed and set aside.

Next, heat olive oil on medium-high in large nonstick skillet or Wok.  Add garlic, ginger, and onion; stir-fry 1-2 minutes.  Add chicken and marinade; cook about 3-4 minutes.  Add sesame oil and bell peppers; stir-fry ~4-5 minutes.

Serve over couscous.

Delicious!!!  Stir-fry over couscous is fabulous.  Well… anything over couscous is fabulous.

    I still have that box of couscous that we got from whole foods, I know I need to try it. Where do you get minced Ginger at? I don’ think I have ever cooked with that.

    I bought a piece of ginger root from the grocery and then peeled and minced it at home.

    Your stir-fry sounds great! I love anything with ginger… I usually use couscous in vegetable salads; I’ll have to use it as a bed for stir-fry!
