Eating in Season

Winter brings some delicious seasonal fruits and vegetables to my table.  So far this season, I have eaten pomegranates, persimmons, pumpkins, satsuma oranges, sweet potatoes, and butternut squash.  1/2 cup Pomegranate seeds + 1 container Plain 0% Fat Greek Yogurt = pure bliss!  With ~150 Calories, ~17 gm protein, and ~4 gm fiber, this combo is a perfect snack.  Seriously, I think I have Cory hooked on this dynamic duo…

I was a persimmons virgin until just a few days ago…

I ate this one just like an apple.  The taste is very unique with sweetness and a hint of spiciness!?  I liked it but I am not in love with it.

Of course, I had pumpkin in my pumpkin pie

I cannot even count how many satsumas I have had this season… fifty? maybe over a hundred?  They are easy to peel and delicious :)

The other night I made sweet potato and butternut squash fries.

  1. I cooked the butternut squash and sweet potato in the microwave for a couple of minutes.  This helped to soften them which made the chopping a lot easier.
  2. After chopping into thin strips (I leave the skin on for more fiber :) ), I drizzled with a little olive oil and seasoned with salt and pepper.
  3. I baked at 375 degrees for about 45 minutes; flipping them once after 20 minutes.

Oh my goodness, these were outstanding!  I have always loved sweet potato fries but the butternut squash fries were even better… Cory agreed.

I definitely have been enjoying eating in season.

  1. Wow!!!!! You are so adventurous! I’ve never tried persimmons. What do they taste like? And I’ve never even heard of satsumas!! Must go research those two….

    Persimmons taste like nothing I have ever tasted before… sweet with a little bit of spiciness.

    Your blog continues to provide such useful information – thanks! I can’t wait to get to the store to buy a butternut squash – I LOVE sweet potato fries, but never thought about making butternut squash fries – they are now on tonight’s dinner menu!
