Believe it or not, I have never had shrimp over couscous. As a Southern girl, I have had my fair share of shrimp and grits but never shrimp over couscous. What a fantastic combination! I kept it pretty simple with minimal ingredients.
Ingredients
- 2 tablespoons Olive Oil
- 1 pound Shrimp, peeled
- 1/2 Onion, chopped
- 1 Red Bell Pepper, sliced
- 1/2 tablespoon Minced Garlic
- Salt, Pepper, Crushed Red Pepper Flakes to taste
- 1 box of Couscous
Directions
- Heat olive oil in pan. Sauté garlic and onion for 1-2 minutes. Add red bell pepper and sauté for 1-2 minutes.
- Add shrimp to pan and sauté for 5-6 minutes or until shrimp turns pink.
- While shrimp is cooking, prepare couscous according to package instructions.
Serve shrimp and red bell pepper mixture over couscous.
Delicious, simple, and quick! The most time consuming part of preparing this dish was peeling the shrimp.

I make a couscous salad with all sorts of veggies (really depends on what I have around) and a lemon-based dressing.
