Sunday Brunch at Home

After I got off of work, I was in the mood for “Sunday Brunch”.  In our ongoing efforts to save more/spend less, I decided I could satisfy my brunch craving by using food items we already had in the kitchen.  On the brunch menu… Whole Wheat Egg Sandwiches served with Sweet Potato Fries and Sauteed Spinach.

First, I dug out these sweet potato fries from the back of the freezer and baked according to package instructions…

Next, I toasted Oroweat’s 100% Whole Wheat Sandwich Thins while the eggs were cooking.

That egg sandwich was so good… and sweet potato fries are always delicious!  What are some restaurant meals you have recreated at home?

I didn’t realize it was day light savings this weekend… so I was pleasantly surprised and well rested when I woke up this morning.  I plan on relaxing and reading for the rest of this afternoon/evening.  The Saints do not play until tomorrow night… GO Saints!!!
