Despite having to work at the hospital this weekend, I found time to enjoy a date with my soon-to-be husband and catch up on my growing DVR TV show list.

Shrimp over Couscous

Believe it or not, I have never had shrimp over couscous.  As a Southern girl, I have had my fair share of shrimp and grits but never shrimp over couscous.  What a fantastic combination!  I kept it pretty simple with minimal ingredients.
