Garlic Shrimp Pasta
A couple of days after eating my outstanding zucchini/goat cheese sandwich, I wanted to make a dinner that would easily include goat cheese… Cory (for some unknown reason?!) does not share my love of goat cheese so I had to make a dish where the goat cheese was optional. I decided on Garlic Shrimp Pasta.
My cooking began with a glass of Chianti wine. For me, a glass of wine makes cooking much more relaxing and enjoyable!

First, I sauteed ~1/2 cup of diced onions and 1 tablespoon of minced garlic in ~2 tablespoons of olive oil until cooked. While the onions and garlic were cooking, I started boiling the water to cook the whole wheat pasta.

Next, I added shrimp with a couple dashes of red pepper flakes. Shrimp cooks very quickly and can become quite rubbery if overcooked! It usually only takes ~3-5 minutes to cook shrimp.

Once the shrimp was cooked, I added a can of diced tomatoes and simmered for about 5 minutes or so… During the simmering, I cooked one zucchini and one squash in a drizzle of olive oil plus pepper in my Wok.

Lastly, I combined the shrimp and sauce with the pasta… quick, easy, and tasty!

Of course, I added a dollop of goat cheese to my plate.

Halloween is right around the corner! I have a cat costume I may wear… which is pretty funny because Cory hates cats. Are you dressing up as anything?
