This morning as I turned off my alarm, I was thankful it was Friday… until I realized, It definitely was Thursday, not Friday! Does that ever happen to you? Oh well, it is almost Friday… I’m looking forward to some nice weather in New Orleans this weekend. The forecast for Saturday and Sunday is in the 70s with little chance of rain. Sunday I’m looking forward to walking in the Susan G. Komen’s Race for the Cure. For those of you who have a busy weekend ahead with little time to spare for meal preparations… I have an easy meal option for you!
Store bought rotisserie chicken…

The other night, Cory and I ate rotisserie chicken with cooked spinach and fresh, toasted whole wheat bread with Smart Balance spread. Cooking fresh spinach is extremely easy and quick.
- Heat small amount of olive oil in pan.
- Add a few handfuls of spinach.

- Cook ~3 minutes.
- Add salt and pepper to taste.
You can also add other ingredients if you wish such as garlic and onion. I prefer my cooked spinach with minimal ingredients. As for the fresh loaf of whole wheat bread… I toasted a couple slices in the oven on 375 degrees for ~5 minutes while the spinach was cooking.

Ta da… a balanced dinner in less than 10 minutes! Rotisserie chicken also makes great leftovers. Some ideas for leftover rotisserie chicken include slicing chicken for sandwiches, wraps, or salads and/or shredding chicken for use in tacos, burritos, quesadillas, or enchiladas.

Heat a little butter in a pan and cook down some mushrooms. Then add a bunch of spinach, wilt it down, season with salt and pepper. Toss in some rotis. chicken to heat it up. Spread hummus on the inside of a pita pocket and spoon in the chicken mixture. yum yum yum yum yum.
